
The Merseguera vineyards are located in the Alto Turia area at an altitude of 1,050 meters. The Sauvignon Blanc vineyards are situated in the village of Fuenterrobles at an altitude of 850 meters. The viticulture is environmentally friendly and favorable for the development of noble rot. The soil has a sandy loam structure. The vines are 40 years old and have a low yield of 7 hl/ha.
Sauvignon Blanc - Merseguera
The harvest takes place manually in small 15 kg crates, in 3 or 4 rounds, to select and collect only the grapes that are optimally ripe; when the rot has reached "noble". Pressing is done gently. Fermentation proceeds very slowly at controlled temperatures. When the wine has reached its ideal balance, "mûtage" takes place. Fermentation is stopped by abruptly lowering the temperature. Aging takes place for 24 months in French oak barrels.
